You can really enhance and even unlock flavors by seasoning aggressively with salt - before, during and after cooking.
Now, I know many of us grew up using table salt for seasoning food.
Seasoning aggressively with table salt will result in food that leaves you feeling like you've just munched on a salt lick.
After watching chefs cook and seeing what's called for in nearly all recipes I switched from table salt to Kosher salt.
I now use course ground Kosher salt (personal preference - I like the course grind) for seasoning before and during cooking.
My favorite salt is added after the cooking is done..
Fleur De Sel
I read about Fleur De Sel finishing salt in one of Adam Perry Lang's grilling books. He has a whole section dedicated to several other finishing salt recipes in his book Charred & Scruffed, but the 'go to' is Fleur De Sel finishing salt.
Fun fact: APL's wife's name is Fleur.
I finally googled 'Fleur De Sel' to learn more about it.
If you know a bit of French you'll know Fleur De Sel translates to "flower of salt".
Sounds beautiful and delicate.. a perfect description.
I dug deeper and was more intrigued..
Here's the description of Fleur De Sel from the company I buy mine from (couldn't find any locally):

How can you not want to try that?
Again, you'll probably have to order it since most grocery stores don't stock Fleur De Sel - at least not around Cartersville, GA.
It is also noticeably more expensive than table salt at $8.99 or so for a small six ounce jar, but..
It's well worth it.
You only need a little.. just to sprinkle on at the end.

TIP: Get a small wooden salt box to keep your Fleur De Sel in. This will help it retain it's moisture and stay fresh. One container typically lasts me 6 to 9 months.
