Elotes AKA Mexican Street Corn

Grilled Mexican street corn is a fantastic side dish. It's simple, easy, looks great & tastes amazing!


Very popular at our house. Perfect to pair with grilled fish tacos (which is what I grilled with it in the pic above).


What you'll need:

  • Corn on the cob in the husk

  • Limes (at least 1 for zesting & 1 to quarter)

  • Mayo

  • Cotija cheese (get this in Hispanic grocery stores - it's Mexican Parmesan)

  • Cayenne pepper (use ancho chile powder or Tajin if you prefer a mild flavor)

You can grill the corn several ways - in the husk, shucked or shucked wrapped in foil. Shucked can easily dry it out. Wrapped in foil is a good 2nd choice, but in the husk is my favorite option for keeping in moisture using God's own "steaming packet".


On to the cooking..


Peel back the corn husks carefully without removing them, remove the silks, wash the corn, pull the husks back over the corn then soak in water for 1 hr. The soaking reduces the risk of the husk catching on fire & keeps the corn moist.


Time to fire up the grill! You can use a gas grill, but I recommend charcoal. I always grill with hardwood lump charcoal typically mixed with various wood chunks to add extra flavor (future blog post on this).


Put the corn on a spot away from direct high heat - to prevent husk fires. Then cover the grill to create a domed oven effect. After 10-15 minutes the corn should be done.. although I'd recommend checking it periodically to make sure it's not drying out.


When you take it off the grill simply peel back the husks and use them as a natural handle. If you're the crafty type who wants it to look #grillfancy you can take a strip of the husk, tie it around the rest of the shuck to keep it together and BOOM.. instant food style points.


Now put it all together.. slather on some mayo, then shredded cheese, chili powder & lime zest. I give people a lime wedge to squeeze over it as well.


All that's left is to dig in and enjoy the sweetness of the corn, earthiness of the wood smoke & heat of the chili powder that's mellowed out by the mayo, lime & tangy cheese.
